Hi friends ! Here is a simple and easy recipe for pizza dough made with fresh yeast that is delicious .

Yields: 10 portions

Ingredients:

  • 500 gms.Fine flour (maida)
  • 25 gms.Fresh yeast
  • 250 ml Milk
  • 5 gms Salt or / salt to taste
  • 20 gms.Sugar
  • 50 ml Oil/ olive oil or any other cooking oil

Method:

Step 1.

Sieve flour and salt together. Dissolve yeast, sugar in warm milk and keep aside till frothy.

Step 2.

Make a soft dough with the ‘milk yeast mix’ by adding it to the sieved flour, finish the dough with an oil coating.

Step 3.

Cover it with wet cloth, leave for proving (15-20 minutes).

Step 4.

When proved divide the dough into ten equal parts. Round off each part for intermediate proving ( 10 minutes).

Step 5.

Then roll out each round dough ball into a base of 8” diameter and place in a baking tray, prove till double in size.

Step 6.

Prick the bases with a fork and bake in a hot oven ( 375 degrees Fahrenheit) till half baked (blind baking).

Step 7.

Top with desired filling, sprinkle grated cheese on top and finish baking till golden brown in colour.

Besan / Chick pea flour Ka Halwa

Hi friends! Some of our favorite comfort foods for cold weather! Gluten Free: Besan/ Chick pea flour doesn’t contain gluten, so it makes a good substitute for wheat flour in gluten-free diets.

Key Ingredients: Besan, Sugar, Chickpea flour, slivered Almonds, Clarified Butter/ Pure Ghee

Recipe cook time: 20 minutes

Course: Indian dessert

Serves : 6

Ingredients:

  • 1 cup Besan /Chick pea flour
  • 2/3 cup sugar
  • 2 1/2 cups water
  • 4 tbsp pure ghee
  • 2 tbsp slivered almonds for garnishing

Method:

Step 1.

In a pan put the sugar and water and bring it to boil. Keep on simmer, till required.

Step 2.

In a wok/ Kadahi, melt the ghee add the Besan /Chick pea flour and stir fry over medium heat, stir it continually for about 8-10 minutes. When the Besan /Chick pea flour is a light golden in colour and does not stick together much , it is well fried .

Step 3.

Pour the hot sugar solution into the fried Besan /Chick pea flour gently and carefully, stirring continually bring to a boil. Once the water is added, mix the Besan /Chick pea flour mixture well so that no lumps are formed. Gradually Besan /Chick pea flour absorbs the water added and starts thickening.

Step 4.

Thoroughly mix let whole mixture cook for 5-6 minutes more. keep on stirring so that the Besan /Chick pea flour halwa does not stick to the wok / Kadahi and starts leaving the sides. Besan /Chick pea flour halwa is ready now. Serve hot, garnished with the slivered almonds.

Carrot Soup

Ingredients :

  • 4 carrots, medium size, peeled and cut into 1/2″ pieces
  • 1 apples, peeled, cored, and cubed
  • 1 onion , medium size, finely chopped
  • 1 tsp ginger, finely grated
  • 9 cloves of Garlic, finely chopped
  • 2 cups milk , low fat
  • 2 tbsp butter
  • 1 tsp Salt or / salt to taste
  • 1/2 tsp freshly ground black pepper
  • 1 cup water

Method:

Step 1.

Melt butter in a pressure cooker. Add onion sauté till they are translucent add ginger , garlic and sauté for a minute on low flame.

Step 2.

Add cubed apple and carrots and sauté for 2 minutes. Add water and close the lid. On high flame, the moment full pressure is formed, switch off the stove. Let the cooker cool down to room temperature.

Step 3.

Remove the cooked mixture from the cooker into a blender jar and puree the vegetables. Strain and add 2 cups of milk bring to a boil , and then simmer for 5 minutes. Add salt and black pepper.

Step 4.

While the soup is simmering, cut the bread into cubes and in a frying pan over medium flame, heat 2/3 cup of the olive oil until it is just below smoking. Add the bread pieces and fry until crisp and golden brown on all sides. Remove and drain on a kitchen paper towel.

Step 5.

Pour the soup in bowls, garnish with coriander leaves and serve hot with croutons on the side.

Halva (halawa, alva, haleweh, halava, helava, helva, halwa, halua, aluva, chalva) refers to many types of dense, sweet confections, served across the Middle East, South Asia, Central Asia, West Asia, North Africa, the Horn of Africa, the Balkans, Central Europe, Eastern Europe, Malta and the Jewish world.

Hi Friends! Badam Halwa is very easy to prepare and a healthy, delicious dessert . It does take little more time to make a good Badam Halwa!  the result is well worth the effort.

Prep Time: Soak Almonds overnight

Cook Time: 30 minutes

Serves: 6-8

Cuisine: South Indian

Ingredients:

  • 400gms whole almonds
  • 2 cups milk
  • 6 tbsp ghee / clarified butter
  • 400 gms granulated sugar
  • 1/2 tsp saffron strands
  • 6 Green cardamoms, powdered

Method:         

Step 1.

Soak the almonds in a bowl , leave them to soak for overnight. Remove skin from the almonds.

Step 2.

Put the almonds into a blender and add the milk blend the mixture to form a coarse paste .

Step 3.

Take a Kadahi / wok / or a deep, heavy-bottomed pan on medium heat add 4 tbsp of ghee to it. When the ghee melts, add the almond-milk mixture to it mix well.

Step 4.

Add sugar to the mixture and stir to mix well. Add the saffron strands and mix well. Cook the mixture on medium heat, stirring constantly .

Step 5.

As the liquid in the mixture begins to dry up, keep stirring constantly. Add the remaining ghee and stir well.

Step 6.

Keep cooking the mixture until most of the moisture in it dries up. When mixture starts leaving the sides of the Kadahi / wok / pan and the ghee starts to separate from it and halwa no longer sticks to the pan, Badam halwa is ready.

Step 7.

Switch off the stove and remove the Badam halwa onto a bowl to cool. Serve at room temperature .

Note: To store Badam halwa:

Halva can be kept at room temperature with little risk of spoilage. However, during hot summer months, it is better kept refrigerated, as it can turn runny after several days.If you cut the halwa into medium size squares, place a sheet of butter paper between the layers of stacked pieces to prevent them from sticking. Refrigerate  it in an airtight container .

Rice with Lentil/Khichdi

Moong dal khichdi is a very basic and healthy food. Every house hold has their own recipe for khichdi. At my home khichdi was made with split moong dal and rice. Khichdi is probably India’s most popular version of the rice dishes. It is eaten when one is sick, has an upset stomach, needs some comfort food or wants to eat light yet filling. Every household makes khichdi and the taste and style of cooking may differ depending on the way it is prepared and ingredients used. But a basic khichdi is usually made from white rice, yellow, green or split moong dal and topped with some ghee. All these heal and soothe our digestive system. But khichdi is more than just a comfort food. It has numerous other benefits for our body.There are a variety of ways to make khichdi. Here is one  popular way of making khichdi:

Recipe will serve:

Ingredients:

  • ½ cup basmati rice
  • ½ cup moong dal / green gram lentil husked
  • 1 tbsp clarified butter (ghee) / or Olive oil as suitable
  • 1 tsp cumin seeds /jeera
  • 1/8 tsp asafetida /hing
  • 1/2 tsp black pepper powder
  • 1tsp salt
  • 2 1/2 cups water

Method:

Step 1.

Wash and soak the rice and moong dal in about four cups of water for at least 15 minutes. Drain the water and set aside.

Step 2.

Heat the clarified butter in a heavy bottom pan over medium high heat. When ghee or oil is moderately hot, add cumin seeds, when it starts spluttering, add asafetida.

Step 3.

After the asafetida is slightly pink in colour, add soaked and drained rice and dal, salt and water stir.

Step 4.

Let it come to a boil, reduce the heat to low flame, cover and cook for approximately 8-10 minutes.

Step 5.

Turn off the heat and wait for 7-8 minutes before opening the pan.

Step 6.

Mix the khichdi well, dal and rice should be very soft. Serve hot pouring hot butter over the khichdi.

Note: Papdam, pickle, yogurt and are very good accompaniments to the khichdi.

  • 4 tbsp pure ghee

  • 2 tbsp blanched and shredded almonds for garnishing

Method:

Step 1.

In a pan put the sugar and water and bring it to boil. Keep on simmer, till required.

Step 2.

In a wok/ Kadahi, melt the ghee add the sooji and stir fry over medium heat, stir it continually for about 8-10 minutes. When the sooji is light golden in colour and does not stick together much , it is well fried .

Step 3.

Pour the hot sugar solution into the fried sooji gently and carefully, stirring continually. Add cardamom powder and bring to a boil, stir continuously. Once the water is added, to the suji mixture, stir well so that no lumps are formed. Suji / Semolina absorbs the water added and swells.

Step 4.

Thoroughly mix let whole mixture, cook for 5-6 minutes more. keep on stirring so that the Suji halwa does not stick to the wok / Kadahi and starts leaving the sides. Suji halwa is ready now.
Serve hot, garnished with the almonds.
