The oat (Avena sativa), sometimes called the common oat, is a species of cereal grain grown for its seed, which is known by the same name (usually in the plural, unlike other cereals and pseudo cereals. While oats are suitable for human consumption as oatmeal and rolled oats.

Difference between rolled oats and quick oats?

Old-fashioned rolled oats: These are made by steaming the toasted groats and then running them between rollers to create flakes. Rolled oats can be eaten as is or cooked into oatmeal (it takes about ten minutes). Quick-cooking oats: These are simply rolled into thinner flakes, so they cook a little faster.

Cultivation:

Oats are best grown in temperate regions. They have a lower summer heat requirement and greater tolerance of rain than other cereals, such as wheat, rye or barley, so are particularly important in areas with cool, wet summers, such as Northwest Europe and even Iceland. Oats are an annual plant, and can be planted either in autumn (for late summer harvest) or in the spring (for early autumn harvest).

Ingredients :

·         1/2 tea cup Oats

·         1 1/2 tea cups milk

·         1 tea cup water

·         15 Almonds, powdered

·         2 tbsp Chironji

·         2 tbsp Pumpkin seeds (skin removed)

·         2 tbsp Sunflower seeds (skin removes)

·         2 tbsp Musk melon seeds (skin removed)

·         1 tsp flax seed powder

·         6 Dates, seeded and cut into small pieces

Method:

Step 1.

Take water in a pan, add white oats bring it to boil. Add milk  bring it to a boil reduce the heat. Add almonds , chironji, all three types of seeds to the oats and cook for about five minutes or till it reaches a thick consistency.

Step 2.

Add Dates, flax seed powder and stir to mix it. Serve hot in porridge bowls.

Note: If you want sweet porridge, add four tea spoons of sugar and mix it.

Bathua Paratha /Chenopodium flat bread

Bathua /Chenopodium album has an earthy, mineral-rich, astringent salty taste comparable to spinach. Bathua / Chenopodium album is readily available during India’s winter months at elevations up to 4,700 meters. Some sources, such as the “Handbook on Herbs Cultivation and Processing,” also list the plant as a summer crop in irrigated areas.

Hi friends ! Many simple but delicious recipes for Indian flatbreads are there that can be served with Indian curries or main dishes. There are a variety of breads consumed in India like roti, naan, Lachcha paratha and parathas to name a few. I love to prepare all kinds of breads for variation and change in my everyday menu. I hope you will enjoy them all too!

Ingredients:                            

  • 2 cups whole wheat flour
  • 200 gms Bathua leaves, finely chopped
  • 1 tsp Ginger ,finely grated
  • 1 tsp Red chili powder or 2 green chilies paste
  • 1/2 tsp cumin seed, roasted and powdered
  • 3 tbsp olive oil or / cooking oil of your choice
  • 1 cup water
  • Clarified butter for frying parathas

Method:

Step 1.

Put the cleaned and washed , chopped Bathua/ Chenopodium album in a pressure cooker, add 1/4 cup of water, close the lid and place the cooker on high flame. The moment pressure is formed switch off the stove. Let the cooker cool to room temperature.

Step 2.

Take the cooked Bathua/ Chenopodium album from the cooker put in the blender, one tea spoon grated fresh ginger, green chilies puree the mixture to a fine paste ,keep it aside.

Step 3.

In a mixing bowl, take whole wheat flour, salt, red chili powder( if green chilies are not used), cumin seed powder . Add bathua /Chenopodium album leaf puree. Mix the ingredients well.

 Step 4.

Gradually add about 1/4 cup of water or little more, just enough to form a soft dough and knead till smooth. keep aside for 10 to 15 minutes.

Step 5.

Divide into four portions and shape into balls. Roll out each ball into a thin, six to seven-inch round circle. Brush the entire surface of each circle with melted ghee/ claied butter evenly and dust with flour.

Step 6

Fold /Pleat the circle to make a number of folds. When entire circle of dough is pleated then roll up into a spiral. Flatten a bit between your palms and set aside for few minutes. Roll out this pleated dough circle lightly into a six-inch parantha / flat bread.

Step 7.

Heat a griddle /tawa , gently place the rolled paratha / flat bread on it. Cook each paratha / flat bread on both sides on medium heat.

Step 8.

Drizzle a little ghee all around the semi cooked paratha / flat bread and shallow-fry the paratha / flat bread till both sides are golden brown.

Step 9.

Serve hot lightly crushing the paratha / flat bread with your hands to separate the layers. It goes very well with Vegetable, potato stews / aloo sabzi etc.

Matar ki Puri /Green peas stuffed Indian fried bread

Sweet, delicious green peas, also popular as garden peas, are one of the ancient cultivated vegetables grown for their succulent nutritious green seeds. Peas probably have originated in the sub-Himalayan plains of north-west India. Today, this versatile legume is one of the major commercial crops grown all over the temperate, and semi-tropical regions.

Botanically, pea plant is an herbaceous vine. It belongs to the family of Fabaceae, in the genus: Pisum. Scientific name: Pisum sativum. Some of the common names include english peas, sweet peas, garden peas, pease,…etc.

Ingredients

  • 1 1/2 cup Mutter /Green peas , shelled
  • 2cups Wheat flour
  • 1 tsp jeera / cumin powder
  • 1 1/2 tsp Salt / or to taste
  • 1/4 tsp Asafetida /hing
  • 1/2 tsp Red chili powder
  • 1/2 tsp black pepper powder
  • 1 tsp dry mango powder/ aam choor
  • Oil for deep-frying

Method:

Step 1.

In a pressure cooker take the shelled peas, add a cup of water and 1/4 tsp salt close the lid. Place the pressure cooker on high flame . The moment full pressure is formed , switch off the stove. Allow the pressure cooker to cool down to room temperature, open the lid and roughly blend the boil peas in a blender or mash them with a masher. Keep aside.

Step 2.

In a mixing bowl take wheat flour, add 1 tsp salt and little water to make a firm dough. Cover and set aside for fifteen minutes.

Step 3.

 In a wok / kadhai / heavy bottom pan heat 2 tbsp oil add asafetida / hing powder saute for few seconds, the moment it turns pink add geera / cumin powder, red chili powder, 1/2 tsp salt and dry mango powder / aam choor sauté for half a minute. Add the mashes peas mix well and cook till the water evaporates. Mix well and remove from heat.

Step 4.

Divide the dough into equal portions and shape into balls. Roll out each portion to a thick small disc and place a tablespoon of the peas mixture and gather the edges to make a ball and flatten it with your palms.

 Step 5.

Roll it lightly to make small stuffed puris. Heat oil in a kadai and slid in gently the stuffed puri, deep fry the puris till golden and puffed. Drain on absorbent kitchen paper towel.

 Step 6.

Serve hot with khatta meetha/ sweet and sour yellow pumpkin dish/sabzi and mango pickle for best results.

  • Green peas are one of the most nutritious leguminous vegetables rich in health benefiting phyto-nutrients, minerals, vitamins and anti-oxidants.
  • Fresh, tender peas are relatively low in calories on comparison to beans, and cowpeas. 100 g of green peas carry just 81 calories, and no cholesterol. Nonetheless, they are good sources of protein, vitamins, and soluble as well as insoluble fiber.
  • Fresh pea pods are an excellent sources of folic acid. 100 g provides 65 µg or 16% of recommended daily levels of folates. Folates are one of the B-complex vitamins required for DNA synthesis inside the cell. Studies suggest that adequate folate rich foods when given to expectant mothers would help prevent neural tube defects in their newborn babies.
  • Fresh green peas are very good in ascorbic acid (vitamin C). 100 g of fresh pods carry 40 mg or 67% of daily requirement of vitamin C. Vitamin C is a powerful natural water-soluble anti-oxidant. Vegetables rich in this vitamin would help human body develop resistance against infectious agents and scavenge harmful, pro-inflammatory free radicals from the body.
  • Peas contain phytosterols, especially ß-sitosterol. Studies suggest that vegetables like legumes, fruits and cereals rich in plant sterols help lower cholesterol levels inside the human body.
  • Garden peas are also good in vitamin K. 100 g of fresh seeds contain about 24.8 µg or about 21% of daily requirement of vitamin K-1 (phylloquinone). Vitamin K has been found to have a potential role in bone mass building function (mineralization) through promotion of osteotrophic activity inside the bone cells. It also has established role in the cure of Alzheimer’s disease patients by limiting neuronal damage inside the brain.
  • Fresh green peas also carry adequate amounts of anti-oxidants flavonoids such as carotenes, lutein and zea-xanthin as well as vitamin-A (provide 765 IU or 25.5% of RDA per 100 g). Vitamin A is an essential nutrient required for maintaining healthy membranes, skin and eye-sight. Additionally, consumption of natural fruits/vegetables rich in flavonoids helps to protect from lung and oral cavity cancers.

Uthappams or ooththappam or Uthappa is a dosa-like dish made with a batter. Unlike a dosa, which is crisp and crepe-like, uthappam is a thick pancake, with toppings cooked right into the batter. Uttapam is traditionally made with different toppings such as mixed vegetables, tomatoes, onion/ shallots, chilies, cabbage, coconut etc. It is generally eaten with sambar or chutney.

Hi friends ! Instant uthappams always salvage the situation when nothing is planned for breakfast. Here is the most simple, easy and never failing instant uthappams recipe for you all.

Makes: 4 Uttapams

Ingredients:

  • 1 cup Rice flour
  • 1/2 cup Maida /All purpose flour
  • 1/2 cup Suji rawa /Semolina
  • 1/2 cup curd /yogurt /Dahi, thick slightly sour, whisked
  • 2 medium size onions, very finely chopped
  • 2 medium size tomatoes, very finely chopped
  • 1/2 tsp baking soda
  • 1 Green chili paste
  • 2 tbsp Coriander/ Cilantro leaves, finely chopped
  • 1 tsp Cumin seeds
  • 2/3 tsp Salt/ or to taste
  • Oil,to cook uttapams

Method:

Step 1.

In a mixing bowl mix all purpose flour/ maida ,suji rava/semolina ,rice flour, salt , baking soda.

Step 2.

Add to step1 mix whisked curd / yogurt / Dahi and gradually add sufficient water to it and mix until lump free batter is formed.

Step 3.

The batter should be thick but of pouring consistency Keep this aside for 15 minutes.

Step 4.

Add green chili paste, cumin seeds and finely chopped coriander/Cilantro leaves, and mix it well.

Step 5.

Pour a ladle full of batter on a hot non stick tawa /gridle spread it in a circular motion on the tava lik we make a dosa taking care that the quantity of batter will be more than a dosa as the uthappam is thicker. top the uthappam with a handful of the onion, and tomatoes .

Step 6.

Pour 1 tbsp oil approx over and around the uttapam, cover it with a lid and cook for 1 -2 minutes on medium flame.

Step 7.

Turn / flip the uthapaam when cooked on one side. The onion, tomato side gets cooked flip it back this side also gets cooked and light golden brown in colour.

Step 8.

When the uthappams are crisp and cooked on both sides, serve hot with hot sambar and coconut chutney. Uthappams can also be served with coriander chutney .

Note:

  • These uthappams are best eaten hot because cold uthappams turn soggy.
  • when on high flame do not pour the batter on the hot non -stick tawa / gridle . Reduce the flame to low before starting to pour the batter for the next uthappam.
  • Always stir the batter before pouring for the next uthappam.
  • There are many instant variety dosas like Rawa doas, BesanDosa, Wheat flour Dosa and Oats Dosa to name a few.

Health Benefits:

Traditional Indian recipes are very tasty, quite nutritious, many are low in calories and fat if prepared at home. These days, the trend of eating out in restaurants has gone up. The food available there may not be as nutritious and low in fat and calories as that prepared at home. Also the quality of oil may also be open to discussion. It is not known if the restaurant cooks are using same oil repeatedly many times. Reusing oil for frying repeatedly will make the recipes unhealthy. Kuttu ki Puri/Indian Buckwheat bread

Buckwheat / Kuttu:

A member of the genus Fagopyrum; annual Asian plant with clusters of small pinkish white flowers and small edible triangular seeds which are used whole or ground into flour. Energizing and nutritious, buckwheat is available throughout the year and can be served as an alternative to rice or made into porridge. While many people think that buckwheat is a cereal grain, it is actually a fruit seed that is related to rhubarb and sorrel making it a suitable substitute for grains for people who are sensitive to wheat or other grains that contain protein glutens. Buckwheat flowers are very fragrant and are attractive to bees that use them to produce a special, strongly flavored, dark honey.

Ingredients

  • 2 cups kuttu ka atta/ Buckwheat flour
  • 2 medium size potatoes boiled, peeled and mashed , to give one cup mashed potatoes
  • 1 level tsp salt / or to taste
  • Oil for deep frying

Method:

Step 1.

In a mixing bowl take Kuttu ka atta/ buck wheat flour, mashed potatoes and salt mix well and knead into stiff dough, with the water. Cover and leave the dough for at least twenty minutes.
Step 2.
Divide the dough into 10-12 portions, and shape each portion into round, smooth balls, apply little oil in your hands, to make it easy to handle the dough.

Step 3.

With a rolling pin, roll each dough ball portion into a thin rounds and keep ready for frying in a tray.
Step 4.

Heat sufficient oil in a wok / kadai or deep pan. Slide the rolled dough (puris) into the oil slowly and deep fry till golden. Press gently with a slotted spoon in the centre, so that puri puffs up. Drain on an absorbent Kitchen paper before transferring on to a serving dish.

Step 5.

Serve them hot with Aloo ki sabzi.

Note:

Boiled and mashed Potatoes or Arbi / Colocacia has to be added to Kuttu ka Atta as it cannot be easily kneaded with just water. The Puris get crisp and tasty when the flour is kneaded with Potato or Arbi.

Paniyaram /spiced dumplings originated in Tamil Nadu ,south of India, these are made in a special utensil or cookware called paniyaram chatti which have molds in it like a muffin pan . It is the traditional cookware used for making the paniyaram / spiced dumplings and gives the them round ball like appearance. It is made with rice and black lentil/ urad dal batter . These are basically called appams or spicy dumplings, and are generally served for breakfast or as a snack. These are also known in South India as Kuzhi paniyaram ,appe, guliappa, gulittu, and gundponglu, etc.

The batter is made by soaking the ingredients like rice, black lentils and Fenugreek seeds overnight in water, grinding the contents, then letting the batter ferment. Salt is added after mixing, the batter and  is poured into the cookware pan’s compartments and placed on a low flame. After couple of minutes, the appams / paniyaram / spiced dumplings are flipped over to cook from the top . The Kuzhi paniyaram /spiced dumplings are ready to serve when they turns golden-brown  all around .

Ingredients:

  • 3 cups idli batter
  • 1 medium size onion, finely chopped
  • 1 green chili, finely chopped
  • 1 tsp ginger, finely grated
  • 1/4 tsp asafetida/hing
  • 1/2 tsp red chili powder(optional)
  • 2 tbsp Cilantro / coriander, finely chopped
  • 2 tbsp grated coconut
  • 2 tbsp carrot, finely grated
  • 1/4 tspsalt if required

Method:

Step1.

In a mixing bowl take the left over batter , add coconut, onions, green chili, ginger, carrot and salt, mix well.

Step 2.

On a medium flame heat the paniyaram chatti/ dumpling cookware with circular moulds . In each mould add a drop of cooking oil.

Step 3.

Take a spoonful of the batter mix and put in each mould leaving 1/4 of the mould empty.

Step 4.

Reduce the heat to low flame and allow the batter mix to cook for 1-2 minutes.

Step 5.

When the batter is firmed in the moulds, turn each paniyaram/ dumpling, in each mould with the help of a skewer or tip of the knife so that the other side get cooked and becomes golden brown.

Step 6.

Check the paniyaram/ dumplings for even cooking, turn once or twice for uniform cooking. Remove the cooked paniyaram/ dumpling from the cookware mould and serve hot with coconut chutney / sambar or both chutney and sambar.

 Note: Many variations can be tried with the basic recipe.

Hi friends! Here is one more recipe for healthy breakfast. Dosa is one of the most popular Indian breakfast. There are many varieties of Dosas . Dosa is like a pancake. This recipe of Moong Dosa or Pesarattu is a healthy and delicious breakfast recipe of Andhra Pradesh. It can be served with Upma.

Ingredients:       

  • Cup Moong sabut / Green gram whole/ pesalu
  • 1/2 cup rice flour
  • 1 medium size onion, finely chopped
  • 1 green chili finely chopped
  • 1 tsp ginger, finely grated
  • 1/8 tsp Asafetida / hing
  • 1 tsp cumin seed / jeera
  • 1 tbsp cilantro / coriander
  • 1/2 cup olive oil / or any other cooking oil for frying dosas

Method:

Step 1.

Wash Moong sabut / Green gram whole well. Soak the Moong sabut / Green gram whole overnight in 500 ml water.

Step 2.

Grind the soaked and drained Moong sabut / Green gram whole , asafetida, green chili, ginger, coriander leaves, salt with some water into a thick smooth paste. Remove the batter in a mixing bowl.

Step 3.

Add the rice flour to the batter and mix well.

Step 4.

Place a non-stick tava / griddle over medium flame. Grease the non-stick tava / griddle lightly. Test by sprinkling a few drops of water on it if water sizzles right away non-stick tava / griddle is ready for making dosa.

Step 5.

Pour a ladle full of the batter mixture onto the non-stick tava / griddle and spread evenly with the back of the ladle, about six to eight inches in diameter.

Step 6.

Sprinkle some of the finely chopped onions, green chilies and coriander leaves. Drizzle oil at the sides and in the center. When the batter begins to dry a bit, gently pour one tsp of oil over and around it again. Wait for about 20-30 seconds, then flip the dosa using a spatula.

Step 7.

Press the dosa very gently with the spatula all around to ensure even cooking, when dosa is golden brown on both sides. Flip it over again and add a big spoonful of mixed vegetable upma in the center of the dosa /pesarattu, fold it once with the help of spatula and remove from non-stick tava / griddle, slide it gently on a plate.

Step 8.

Sprinkle some water on the non-stick tava / griddle, and repeat this process for making the remaining dosas /pesarattus. This batter gives approx 6-8 Dosas /pesarattus.
Step 9.

Serve hot. Coconut / cilantro/ coriander chutney is an excellent accompaniment to this dosa .

Dosa, Dos and Don’ts for best results:

Do use a moderately hot griddle/ tava for dosas
Do use a grinder / blender for the batter
Do place the batter in 70-80 degrees F for fermentation
Don’t start making dosas using chilled batter
Don’t make dosas on an unseasoned griddle/ tava
Don’t use poor quality rice and dal

Here is a super food I really love and enjoy not only because it keeps me full but it also helps me lose weight. It has many properties that are beneficial for us especially when we are starving ourselves in the name of being on diet.

Yes, I am taking about the good old Green Gram or Green Moong. We can have it in many forms. We can soak it and make a healthy dal to have with roties or brown rice, we can sprout it and make a healthy salad from it. Ingredients:

  • 1 cup white oats, I used Quaker’s quick white oats
  • 1/2 cup rice flour
  • 1 carrot, finely grated
  • 1/2 cup yogurt , whisked well
  • 1 pinch asafetida
  • 1 tsp cumin seeds
  • 1 green chili, finely chopped
  • 2″ ginger piece,finely grated
  • 1 tsp salt / or salt to taste
  • 2 tbsp cilantro/ coriander, finely chopped
  • 1 1/2 cup water
  • 2 level tsp ENO fruit salt,Regular / 1 small pouch
  • 3 tbsp Olive oil

Method:

Step 1.

Make fine powder of oats in a grinder, keep aside.

Step 2.

In a mixing bowl take the powdered oats, rice flour, salt, asafetida, cumin seeds  and whisked yogurt, mix the ingredients well. Gradually add water as needed to make batter consistency of dosa/ pancake mix. Set aside for about ten minutes.

Step 3.

Add green chilies, finely chopped cilantro /coriander, grated carrots, add  ENO fruit salt mix it well, batter will become little frothy.

Step 4.

Place a non-stick tava / griddle over medium flame. Grease the non-stick tava / griddle lightly. Test by sprinkling a few drops of water on it if water sizzles right away non-stick tava / griddle is ready for making dosa.

Step 5.

Pour a ladle full of the batter mixture onto the non-stick tava / griddle and spread evenly with the back of the ladle, about six to eight inches in diameter.

Step 6.

When the batter begins to dry a bit, gently pour one tsp of oil over and around it. Wait about 20 seconds, then flip the dosa using a spatula.

Step 7.

Press the dosa very gently with the spatula all around to ensure even cooking, when dosa is golden brown on both sides, fold it once with the help of spatula and slide it gently on a plate.

Step 8.

Repeat this process for the remaining dosas.

Step 9.

Serve oat dosa hot. The best accompaniments with the Oats Dosas are coriander/ coconut/ curry leaves or tomato chutney.

Note:

  • The key for the perfect and crisp lacy dosas lies in the consistency of batter, so please stick to the measurements provided in the recipe.
  • Mix the batter well before use.
  • The tawa / griddle used to prepare dosas, preferable should be flat an iron or non-stick tawas work best, use a properly heated tawa /griddle ( not cold , not too hot) for best results.
  • For the instant dosas pour the batter mixture onto the tawa / griddle and spread in a circular way evenly with the back of a ladle, about six-eight inches in diameter.
  • Dosas are best when eaten hot. Cold Dosas turn soggy and become slightly sticky.

Gram Flour / Besan Uttapam

Gram flour, also known as garbanzo bean flour, chickpea flour, or besan, is a pulse flour made from ground chickpeas. Used in many countries, it is a staple ingredient in Indian, Pakistani, Nepali and Bangladeshi cuisines.

Hi friends! Gram Flour / Besan Uttapam is a tasty dish for breakfast or as a snack. This recipe is easy and quick to prepare and can be served with coriander / cilantro chutney. It is a favorite dish of the family for breakfast, folded with cheese.

Ingredients:

  • 1 cup gram flour / besan
  • 150 gms fresh cottage cheese / paneer, grated
  • 1/4 cup rice flour
  • 1/4 tsp baking soda
  • 1 level tsp salt
  • 1/2 cup water
  • 1/2 tsp Ajwain / Carom seeds
  • 1/2 tsp red chili powder
  • 2 tsp coriander powder
  • 1 tbsp cilantro / coriander leaves, finely chopped
  • 6 tbsp of oil to cook

Method:

Step 1.

Grate the the cottage cheese/ paneer and keep aside.

Step 2.

In a mixing bowl take Gram Flour / Besan, rice flour , add salt, baking soda, carom seeds, coriander powder, red chili powder slowly add water mix to make a smooth batter. The mix consistency of pancake batter or Dosa batter.

Step 3.

Take  a non-stick pan /tava and place on medium flame. To check the heat level required, test by sprinkling a few drops of water on it. Water should sizzle right away.

Step 4.

Pour about 1 ladle of the batter onto non- stick pan / tava stick and spread evenly with a back of ladle. Starting from the center, with spiral movement spread the batter outward evenly to form a circle about 6″ in diameter.

Step 5.

Immediately after spreading the batter onto non-stick pan /tava , spread evenly two tbsp grated cottage cheese/ paneer, 1 tsp finely chopped cilantro / coriander leaves on the dosa.

Step 6.

When batter starts to dry a little, slowly spread little cooking oil over and around it. After 30 seconds; flip the uttpam using a flat spatula. Press the uttpam lightly all around with the spatula to make the cheese and uttpam cook evenly until crisp and golden brown on both sides.

Step 7.

Repeat the process for the remaining uttpam. Serve uttpam hot with cilantro / dhania / coriander chutney.

Note:

Quick spread of the batter on hot non-stick pan / tava, will make the spreading easier and will give better results.

Health benefits of Besan/ gram flour:

Besan flour, or gram flour, may not sound familiar until you hear its third name: chickpea flour. The characteristic nutty flavor from finely ground chickpeas gives besan flour the ability to create tasty, simple breads that stand on their own with few ingredients. It also stands above wheat flour in protein and folate content.

Basics

Besan flour is naturally higher in protein than wheat-based flours. One-half cup contains 10 grams of protein, compared to 8 grams in whole-grain wheat flour and just 6 grams in white flour. One-half cup of besan flour has 178 calories and 3 grams of total fat. Even though that’s double the fat of whole-wheat flour, 70 percent of the fat in besan flour comes from healthy unsaturated fats that can lower cholesterol. The same portion has 5 grams of fiber.

Vitamins

One-half cup of besan flour has 201 micrograms of folate, compared to 26 micrograms in whole-wheat flour and 182 micrograms in enriched white flour. If you consumed an entire half-cup of besan flour, you’d get 50 percent of the recommended daily intake of folate. This important vitamin is critical for the production of proteins and genetic material. In this role, folate is especially important during periods of rapid growth. When taken before and during pregnancy, it helps prevent birth defects of the brain and spinal cord. The same portion of besan flour is a good source of thiamin and vitamin B-6. Thiamin converts food into energy, while vitamin B-6 is needed for the synthesis of red blood cells and the neurotransmitter serotonin that regulates appetite and mood.

Minerals

Besan flour delivers a boost of iron, magnesium and phosphorus. Well known for its role carrying oxygen, iron also functions as an antioxidant and it’s needed for the production of collagen. Magnesium causes muscles to relax, which helps maintain vascular health and regulates blood pressure. Phosphorus combines with calcium to form the primary compound used to build bones. It also carries lipids through the body and activates enzymes that produce energy. One-half cup of besan flour has 2 milligrams of iron, 76 milligrams of magnesium and 146 milligrams of phosphorus.

Preparation Tips

Besan flour is usually mixed with water, olive oil, yogurt or milk to make a paste that can be any consistency depending on the desired use. The paste is seasoned with any combination of parsley, cumin, coriander, turmeric, red chili, rosemary, onion or garlic. It’s traditionally cooked in a skillet to create a flatbread called socca or fried into fritters. Use a thick besan flour batter to coat and fry vegetables or add small shrimps to a thin batter and fry them into appetizer-like pancakes.

Gluten Free

Besan flour doesn’t contain gluten, so it makes a good substitute for wheat flour in gluten-free diets. Depending on the food you’re making, the bean taste may not create the best result. Try mixing besan flour with white rice flour, making sure that the total amount is the same that’s called for in the recipe. You’ll probably need to adjust the fluids to create the same consistency achieved with wheat flour. If you’re making yeast dough, you’ll need to add about 1 teaspoon of guar or xanthan gum for every 1 cup of flour so that the yeast can rise.

Chana Dal: A Nutritious Boost for Your Weight Loss Diet

Different legumes and pulses benefit any diet because they are high in protein and other nutrients that contribute to proper nutrition. When you are on a weight loss program, eating balanced meals is essential to achieve your goals. In Eastern cuisine, chickpeas and its varieties are widely in use and they are often included in several curry dishes. Chana dal is one of such varieties that provides good nutrition .

Ingredients:

  • 1 cup Chana dal /Bengal gram dal
  • 1/4 cup rice flour
  • 2 Green Chilies
  • 1 Onion , finely chopped
  • 2 tbsp Coriander leaves, finely chopped
  • 2/3 level tsp Salt or / salt as required
  • 1/4 tsp Hing / Asafetida
  • 1/4 tsp baking soda
  • Olive Oil for fryingMethod:

Step 1.

Wash well and soak the Chana dal /Bengal gram dal in water overnight.

Step 2.

With little water from the soaked dal grind the dal with green chilies, chopped onions , Hing / Asafetida

and salt into a batter. Take out the batter in a mixing bowl, keep aside.

Step 3.

Chop the coriander leaves into small pieces and add to the batter.

Step 4.

Heat a nonstick pan/ griddle / tawa and grease it with little oil.

Step 5.

On medium flame pour a ladle full of batter and spread it on the greased nonstick pan/ griddle / tawa

and pour oil around it.

Step 6.

After the dosa is cooked on one side, flip it on the other side and cook on low medium flame. Cook on both the sides, using a little oil, till they turn golden brown in colour. Now remove the Chana dal dosa on a plate. Serve hot with coriander or mint chutney.

Health benefits of chana dal:

This pulse is high in protein as well as dietary fiber that aids digestion and keeps you full for longer. Chana dal is high in fiber and help to lower cholesterol. Apart from having a great taste, it also has a very low glycemic index, which is important for those with diabetes. Ingredients:

  • 500 gms Broccoli, cut into florets,washed
  • 1/2 cup green gram lentil / moong dal dhuli, washed
  • 3 cloves Garlic
  • 1 tsp ginger, finely grated
  • 2 Green Chilies
  • 1 level tsp Salt or / salt to taste
  • 1/2 cup Chickpea Flour / Besan
  • 1/4 tsp Cumin seeds, roasted and Powdered
  • 1 tsp Dry Mango Powder
  • 1 tsp Coriander Powder
  • 1/4 tsp or to taste Red Chili Powder
  • 1 tsp Lemon Juice
  • 2 tbsp Almonds powdered
  • 3 tbsp Gingili / sesame seeds

Method:

Step 1.

Take the broccoli and green gram lentil / moong dal dhuli in a pressure cooker add 1/4 cup water and 1/4 tsp salt. Place the cooker on the high flame, as soon as pressure is formed, switch off the stove. Cool the cooker, open and take out the broccoli, green gram lentil / moong dal dhuli, in a strainer and keep aside.

Step 2.

Mash Broccoli and cooked moong dal well.

Step 3.
In a separate bowl, combine Chickpea Flour, Turmeric Powder, Cumin Powder, Dry Mango Powder, Salt, Coriander Powder and Red Chili Powder, broccoli moong dal mashed and almond powder mix well.

Step 4.
Add lemon juice and mix again. Shape into medium size rounds and pat them flat with your palm.

Step 5.

Roll the kebabs in sesame seeds /gingili seeds . Deep fry the sesame seeds /gingili seeds -studded kebabs on low to medium flame till golden brown .

Step 6.

Serve hot Broccoli kebabs with fresh coriander / mint chutney.

Hi friends! Enjoy poori made with spinach dough. Spinach is an excellent source of vitamin K, vitamin A (in the form of carotenoids), manganese, folate, magnesium, iron, copper, vitamin B2, vitamin B6, vitamin E, calcium, potassium and vitamin C. It is a very good source of dietary fiber, phosphorus, vitamin B1, zinc, protein and choline.

Ingredients:

  • 2 cups whole wheat flower
  • 1 cup Palak leaves, pureed
  • 1/2 tsp coriander powder
  • 2 Green chilies, fine paste
  • 1 cup water
  • 1/2 tsp cumin seed, roasted and powdered
  • 3 tbsp olive oil or / cooking oil of your choice
  • Oil for deep frying

Method:

Step 1.

In a bowl, mix together whole wheat flour, and salt, coriander powder, green chili paste, cumin seed powder , add Olive oil to the mixture, using fingers, mix in oil till it resembles bread crumbs. Add palak leave puree.

 Step 2.

Slowly add about half a cup of water or little more, just enough to form a firm/ stiff dough and knead till smooth. keep aside for 10 to 15 minutes.

Step 3.

Divide the dough into small lemon size, equal portions, and roll out into 3″ rounds on an oiled board.

Step 4.

 Heat the oil for deep frying, in a wok or kadhai, fry the puri one at a time, holding them under the oil on the first side until they puff. Turn and deep-fry the puris till they turn light golden brown in colour from both the sides.

Step 5.

Drain on absorbent paper kitchen towel lined plate, so that puris are dry, without excessive oil.

Step 6.

Serve hot, goes very well with Vegetable, potato stews / aloo sabzi etc.

The words simila, semidalis, groat, and grain may all have similar proto-Indo-European origins as two Sanskrit terms for wheat, samita and godhuma. Semolina may also be a loan word from the Semitic root smd – to grind into groats (Arabic: سميد‎ samīd).

  • 1 cup Semolina / Suji/ Rava
  • 1/4 cup Milk
  • 1 level tsp Salt / or salt to taste
  • 1/4 tsp Asafetida / Hing
  • 1 tsp Ginger, finely grated
  • 1 Green chili , finely chopped
  • 1/4 tsp Chili powder
  • 1 tsp Coriander /Cilantro leaves, finely chopped
  • 1/2 tsp cumin seed / jeera, roasted and powdered
  • 1 onion small , Finely chopped
  • 4 tsp Olive Oil

Method:
Step 1.

Take sooji in a bowl, add 1/4 cup of milk and mix it well. Let it stand for 15 minutes.

Step 2.

Add to the slightly damp Sooji / semolina onions, coriander leaves, cumin powder, Asafetida, salt, cumin powder, ginger, green chilies and make a soft dough adding very little extra water, to bind the suji / Semolina in to a dough so that it can be rolled into balls. (If the mixture is very dry, add gradually little water). Make four equal portions of the dough prepared.
Step 3.
Place a ball of dough on the rolling board , dust it with little flour and pat it with your palm into a thick roti.
Step 4.
Heat a griddle or non stick tawa on medium flame, grease it with a drop of oil. Drizzle few drops of oil along the edges of the roti. Cook on both sides till it turns light golden brown both sides.(it cook fast, so keep an eye on it).
Serve hot  this delicious flat bread with freshly made coriander chutney !

The leaves lose this powdery residue upon maturity. If consuming raw, look for younger leaves. Otherwise, opt for firm, dense leaves with no obvious signs of wilt.

Note : Bathu /Chenopodium album leaves can be pureed raw or  cooked in pressure cooker. In a pressure cooker take the Bathu /Chenopodium album leaves add a quarter cup of water , place the cooker on a high flame.The moment pressure is formed switch off the stove. When the cooker cools down to room temperature , open the lid and puree the Bathu /Chenopodium album leaves.

Ingredients for Aloo ki sabzi:

  • 4 potatoes medium size, boiled peeled and roughly mashed
  • 3 tomatoes medium size, finely chopped
  • 2 green Green chilies
  • 1/4 tsp red chili powder
  • 1 tsp coriander powder
  • 1/2 tsp cumin seeds
  • 1/4 tsp asafetida / hing
  • 1 tsp ginger, finely grated
  • 1 level tsp salt or / salt to taste
  • 2 tbsp coriander leaves, finely chopped

Method:

Step 1.
cut two potatoes into tiny cubes and roughly mash the other two potatoes and keep aside.

Step 2.

Grind tomatoes in a blender with green chili and ginger.

Step 3.

Heat oil in a pan. Add asafetida saute for few seconds, add cumin seeds. When cumin starts to crackle, reduce the heat to low flame.

Step 4.

Add salt, turmeric powder, coriander powder red chili powder and sauté for few minutes, add tomato puree mix well. Cook for 5-6 minutes or  until  the oil comes out.

Step 5.

Add in potatoes and mix. Add two and half cups of water mix well let it come to a boil, cook for 10 minutes on slow fire. Switch off the stove.

Step 6.

Garnish with fresh coriander leaves. Serve with hot Bathua pooris.

Note: Add a little salt to the oil to keep it from smoking. Always add the puri to the oil as soon as they’re made. Rolled and kept puris, tend to become a little dry and sometimes do not puff up properly.

Health benefits of Bathua/ Chenopodium album:

Many groups in India use bathua medicinally. According to the book, “Indian Medicinal Plants,” bathua acts as a laxative, anthelmintic for hookworms and roundworms, and as a blood purifier.

When prepared as an infusion, it manages hepatic disorders, spleen enlargement, biliousness, burns, and ulcers. The book, “Handbook on Herbs Cultivation and Processing” explains that that the ground plant mixed with alcohol is also applied topically to treat rheumatism and arthritis.

Bathua or Chenopodium album, also called Goosefoot, Lambs’ quarters and All Good is a plant whose leaves are used as a vegetable. Bathua has a lot of health benefits as well. It is very useful for those suffering from kidney stones. Take out the juice from tender leaves and stems by grinding them, Drink 10-15 ml of this mixed with water on empty stomach in the morning and then in the evening also for some days. It helps to break the stones and helps in their removal. Bathua is a brain food, removes urinary infections and promotes urine flow. It is useful for those suffering from arthritis. If there is swelling and pain steam heat some leaves and apply this as a hot poultice on the area. It will reduce swelling and pain. Bathua is also useful for internal swellings of stomach, intestine, liver, uterus etc.

In jaundice mix equal quantities of juice of bathua and giloy (tinosporia cordilolia). Take 25-30 ml of this mixture in the morning and evening for relief from jaundice.

For gout and high uric acid eat bathua vegetable regularly.

Neer Dosa

 

Neer dosa or Neer dose (Tulu : ನೀರ್ ದೋಸೆ) literally meaning Water dosa is a crêpe prepared from rice batter. It is light type of dosa, an Indian dish. Neer dosa is a delicacy from of Tulu nadu region in Karnataka. ‘Neer’ is the word for water in Tulu.

The white,lacy paper thin neer dosas are very popular as they are easy to prepare and no fermentation of the batter is required. The vegetarians can enjoy Neer dosa with tomato chutney or coconut chutney, sambar, vegetable stew or kurma etc.

Prep time: 15 min

Ingredients

  • 1 1/2 cups Raw rice (Sona Masuri rice)
  • 1 level tsp salt or /Salt
  • Cooking oil

Method:

Step 1.

Wash and soak rice over night. Drain the water and grind the rice adding water as required. The batter should be of flowing consistency and must be well ground with a smooth texture.

Step 2.

Add salt and mix well. To test the consistency of batter, dip the spoon in the batter and take out, batter should not form a coating on the back of the spoon. If it does, add more water to the batter.

Step 3.

Take a nonstick pan/ tawa / griddle , grease it and heat it on high flame. To check if the pan/ tawa / griddle is ready to make dosa sprinkle a few drops of water on the hot pan, it should sizzle.

Step 4.

Reduce the flame and pour a ladle full of batter in the center of the pan and swirl it in a circular motion to spread the batter evenly.

Step 5.

Place a lid over the pan and cook on low flame for a minute or so. The dosa remains white. So avoid overcooking it. When neer dosa is ready the dosa leaves sides will leave the pan and the upper layer will appear dry. At this point slowly lift the sides with a spatula, fold in half and again fold it in half to form a triangle.

Remove from pan, place on a serving plate and serve the neer dosa with chutney of your choice, egg curry.

Note:

  1. Use Sona masuri variety of rice for good results.
  2. There is no fermentation required for neer dosa batter. The batter can be used immediately to prepare neer dosa.
  3. If the batter is thick, the dosa will stick to the pan. Keep the batter thin, flowing consistancy.
  4. Each time a fresh neer dosa is cooked, mix the batter well before pouring for the next neer dosa on the pan.
  5. No extra cooking oil is required after pouring the batter on the pan surface, along the sides of neer dosa.
  6. There is no need to flip the neer dosa and cook the other side.
  7. Once one neer dosa is made, place it on a plate. The second neer dosa must be kept next to it and not on top of it as it tends to stick when hot or ideally serve it hot one by one.
  8. Left over batter can be refrigerated and used the next day , but refrigerated batter while reusing, must be used at room temperature and mixed well before preparing the neer dosa. Cold batter will make neer dosa stick to the pan.

Among the intriguingly-termed dishes that comprise dozens of local menus are vegetable stew and appams from Kerala (a stew of carrots, local green peas,potatoes and spices).

Ingredients:

  • 1/2 cup carrot, peeled cut into tiny cubed
  • 1/2 cup potato, peeled and cubed
  • 1/2 cup fresh green peas
  • 1 cup onion, thinly sliced
  • 12 garlic cloves, mashed into a paste
  • 2 tsp ginger, finely grated
  • 1 tb-spoon corn flour
  • 2 tbsp poppy seeds/ khuskhus
  • 12 cashew nuts
  • 3 green chilie paste
  • 1/4 tsp cinnamon powder/1″ piece of cinnamon
  • 3 cloves, powdered
  • 1/2 tsp black pepper powder
  • 6 green cardamoms, powdered
  • 2 cups thin coconut milk or water * check notes for making coconut milk
  • 1 cup thick coconut milk
  • 2 sprigs of curry leaves/kadi patta
  • 1/2 tsp red chili powder
  • 3 tbsp coconut oil
  • 1 tsp salt or / salt as per taste

Method:

Step 1.

In a pressure cooker, add all the chopped vegetables, 1/4 cup water and 1/2 tsp of salt. Switch off the heat as soon as full pressure is formed. Let the cooker cool to room temperature. Open the lid and take out the steamed vegetables in a bowl. Keep the steamed vegetables aside.

Step 2. 

In a pan heat coconut oil add the curry leaves, cinnamon powder, clove powder, cardamom powder and black pepper powder, red chili powder fry for few seconds, till fragrant.

Step 3. 

Add the onions Sauté till the onions become translucent add ginger, garlic, saute for2-3 minutes.

Step 4.

In a dry grinder take poppy seeds/khuskhus,cashew nuts. Grind to a fine powder. Add this powder to the fried masalas , add the steamed vegetables as well.

Step 5.

In the thin coconut milk or water add corn flour mix well add to the vegetables, cover the pan and cook the vegetables in coconut milk for 2-3 minutes.Add the thick coconut milk. stir well and simmer for just  a minute.

Step 6.

Serve kerala vegetable stew hot with appams, neer dosa or boiled rice or Malabar parathas.

Note: Coconut milk can be prepared at home from fresh coconut.

Step 1.

Put the grated coconut in the blender jar add 2 cups of water and blend till the coconut is ground well.

Step 2.

Strain in a muslin cloth/ or a fine sieve and collect the extract in a bowl , this is the thick coconut milk.

Step 3.

The coconut residue is put back into the blender with 1 cup of water and blended again.

Step 4.

Strain and collect the second extract from it in another bowl. This is the thin coconut milk .

Step 5.

Put back the coconut residue again in the blender add 1 cup of water and blend again and it will be thinner third extract, thinnest coconut milk .

Step 6.

Strain for the third time and collect the third coconut milk in the bowl . So the fresh coconut milk is ready. Coconut milk can be refrigerated and used.

History
The origin of cardamom can be traced back to as early as 4th century BC in the monsoon forests of the Western Ghats in southern India. Today, this area is known as the Cardamom Hills, and until 200 years back, this area produced most of the world’s cardamom. The cardamom fruits have been in trade in India for more than 1000 years. They had been in print in the medical compendium Charaka Samhita between 2nd century BC and 2nd century AD. What’s more, it is also mentioned in the Sanskrit texts, Taitirriya Samhita of the 4th century BC. During the same time, the Greeks began importing cardamom from the East. While the inferior grades were called amomon, the superior grades were named kardamomon. Eventually, the Romans started importing substantial quantities of cardamom from India and regarded them as one of the most popular oriental spices in the Roman cuisine. Most of the cardamom was supplied from the evergreen monsoon forests of southern India and Sri Lanka. In 1903, cardamom plantation was abolished due to excessive production in Ceylon, now Sri Lanka, which led to low prices. The British colonies spread the plantation of cardamom in other parts of India as a secondary crop. Today, cardamom is largely used as an aromatic spice in Eastern, Arab and some Scandinavian cuisines.

  • You can easily find both varieties of cardamom. ‘Elettaria’ pods are small and light green in color, while ‘Amomum’ pods are larger and dark brown.
  • To check the freshness of the pods, scratch the pod with your fingertip. In case it gives off a sweet aroma, the pod has passed the test.
  • Do not buy pods that are light in color and have stains, spots or molds.

Cardamom Storage Tips

  • Always store cardamom pods in an airtight container in a cool, dark and dry place.
  • When placed in the refrigerator, cardamom pods retain their freshness for longer durations.
  • Powdered cardamom should always be kept in a tightly sealed container and should be used at the earliest as it tends to lose its flavor quickly.

Tip: Chew on elaichi  regularly after every meal. The best way to keep acidity at bay is to avoid sitting right after you have eating; instead walk around a bit while chewing on the elaichi pod and you should feel much better.

If you suffer from indigestion this tip is for you. Take a two to three pods of cardamom, a small piece of ginger, a few pieces of cloves and a few dhania seeds. Grind them well and eat this with warm water. It acts as an instant remedy for indigestion, bloating and gas.

Cardamom spice is a highly aromatic spice that is most commonly used in Eastern, Arab, and some Scandinavian cuisines. Its unique slightly sweet and savory flavor allows it to be combined with both sweet and savory dishes.

Cardamom seed’s ability to enhance so many types of food is why it is a good combination with a wide range of other ingredients from seafood to sauces, to meats, poultry, vegetables, and even desserts, pastries, and other baked goods.

Hi friends!Unniyappam-Neyyappam is the traditional recipe and popular snack of keralites. Both Neyyappam and Unni appam is often used as a ritual offering in temples in Kerala ,South India.Unni in malayalam means small, Ney means ghee/clarified butter and Appam means small rice cake.

Ingredients:

  • 1 cup Wheat flour
  • 1/4 cup Rice flour
  • 1/2 cup milk
  • 1/4 tsp of Baking soda
  • 1/2 cup Jaggery, grated
  • 4 tbsp Fresh grated coconut, Optional
  • 4 Cardamoms, powdered
  • 1 banana, Ripe and mashed
  • 1 /4 tsp Salt
  • 1 tbsp Pure Ghee/clarified butter

Method:

Step 1.

In a bowl take wheat flour, mashed bananas,rice flour, cardamom powder, grated coconut, baking soda and mix well .

Step 2.

In a pan heat water add jaggery, heat till all the jaggery dissolves.

Step 3.

Mix the jaggery syrup to the flour gradually, stirring and mixing all the ingredients well.

Step 4.

Add slowly milk to  the mix  to have a thick batter.

Step 5.

Keep the batter aside for half an hour.

Step 6.

Heat the appam pan and put a drop of oil into each indent of the mould . Now add the required amount of batter into the mould indents to make them 2/3 full.

Step 7.

Cook for 4-5 minutes on low flame .When it gets cooked (golden brown) on one side, using a skewer or a knife flip over gently  (each appam )and let the other side also cook for 2-3 minutes.Make sure appams are fully cooked. Serve hot.

Note:

Add jaggery according to your sweet taste. Add little amount of more to the batter and mix well.

Idlis

Idlis and dosas fall in the fermented food category. The urad dal & fenugreek seeds South Indian cuisine is almost synonymous with idli! idli is not only easy to make but also extremely healthy and easy to digest. In fact, when stranded on a highway with nothing to eat, people wouldn’t hesitate to walk into a roadside hotel and buy a few idlis, as it is steamed, and therefore quite safe to eat anywhere!

Soaking time:  over night

Preparation Time: 15 minutes

Fermenting time:  Over night

Cooking Time: 12 minutes per batch

Makes: 16 idlis in one batch

Cuisine: India, South India

Course: Breakfast

Ingredients:

  • 3 cups par-boiled rice (ukda chawal)
  • 1 cup urad dal husked /split black gram husked
  • 1 tsp fenugreek (methi) seeds
  • 2/3 tsp or / salt to taste
  • oil for greasing
  • coconut chutney for serving with Idlis
  • sambar for serving with Idlis

Method :

Step 1.

Wash and soak the urad dal with fenugreek seeds and rice separately in sufficient water overnight.

Step 2.

Drain and blend the urad dal and fenugreek seeds in a mixer, adding water slowly as required,till smooth and frothy . Remove it in a big mixing bowl and keep aside.

Step 3.

Drain and blend the rice in the mixer till smooth. Remove and keep aside.

Step 4.

Combine the urad dal and rice paste together in the mixing bowl . Cover and keep aside to ferment overnight.

Step 5.

After the batter is fermented, add salt to the batter and mix well.

Step 6.

Take the Idli mould, fitting in your pressure cooker, ( in five liter capacity pressure cooker, we have an Idli mould for making sixteen Idlis in one batch) . Grease the moulds with oil.

Step 7.

Put spoonfuls of the batter into greased idli moulds. When the mould is filled with batter, place it in the pressure cooker with 3 cups of water.

Step 8.

After closing the pressure cooker lid, place the cooker on a medium high flame, (without the weight) when steam starts coming out , note the time and cook for 12 minutes. Switch off the stove.

Step 9.

Keep it standing for five minutes. Open the lid and carefully take out the Idli mould from the pressure cooker. Let it cool for 7-8 minutes.

Step 10.

After the Idli mould is outside for five minutes, remove the idlies one by one from the moulds with the tip of kitchen knife in to a serving bowl.

Step 11.

Repeat the process with the remaining batter to make more idlis.

Step 12.

Serve hot with coconut chutney and sambar.

Hi friends! Making this creamy, subtly garlicky hung yogurt/curd, garlic dip is  easy. It can also be used as a sandwich spread or as a creamy stuffing for pita bread.

Dips or dipping sauce are used as accompaniments to add flavor to a food, such as pita bread, crackers, cut-up raw cucumber, carrots, seafood, meat and cheese, potato fingers, tortilla chips etc. The food is dipped, and eaten. basded on hung curd Dips are commonly used for finger foods, appetizers, and other easily held foods. Thick dips  /yogurt, are very delicious and popular. Dip is a very widespread food, and is eaten in various forms all over the world.

Ingredients:

  • 6 tbsp Hung curd
  • 6 cloves Garlic, crushed well
  • 1 tsp Mustard paste
  • 1/4 tsp Black pepper powder
  • 1/2 tsp Sugar
  • 1/4 tsp Salt
  • 2 tbsp Vinegar

Method:

Step 1.

Mince the garlic cloves using a mortar and pestle. Keep it aside.

Step 2.

Take a mixing bowl, put the hung curd in a bowl and whisk till it becomes really smooth.

Step 3.

Add the vinegar, crushed garlic, salt, mustard paste, sugar and black pepper powder. Whisk again to mix it well.

Step 4.

Serve with carrot, cucumber sticks, bread and other crisps.

Note: You can make different dips out of this basic dip recipe by adding – finely cut green bell pepper, finely chopped up gherkins and olives, finely chopped mint etc.

How to Make Hung Curd:

When whey water gets completely drained from the curd , hung curd is ready. Hung curd is used in many Indian and Middle Eastern dishes and is a great source of calcium.

Steps-

  • Tie fresh curd tightly in muslin or cheesecloth.
  • Hang the tied ball for draining water / liquids out. Draining over a sink or bowl is best.
  • Wait at least six hours to ensure full draining.
  • Take down the bundle.
  • We can use a weight on the drained curds to press even more moisture out.
  • The HUNG curd can be refrigerated to last a long time without souring.

Ingredients:

  • 1 cup sabudana/ tapioca pearls
  • 4 medium potatoes/aloo
  • 1 tsp cumin seeds/jeera (optional)
  • 1-2 green chillies finely chopped
  • 1 tsp finely chopped ginger/adrak
  • ½ cup peanuts/mungphali
  • 2 tbsp coriander leaves/dhania , finely chopped
  • 2-3 tsp Rice flour, for dusting (optional)
  • 1 tsp Lemon juice, or as per taste
  • 1 tsp sugar
  • 1 1/4 tsp salt or / to taste
  • oil for frying

Wash the sabudana well and then soak it overnight with just enough water to cover it. The water gets absorbed and Sago/ Sabudana looks plumped up. With the help of a strainer drain off all the water completely from the soaked sabudana.

Step 2.

Boil the potatoes. Peel and mash them. take a mixing bowl, put the mashed potatoes and sabudana together.

Step 3.

In a nonstick pan, roast the groundnuts/peanuts till they become slightly golden brown. Cool to room temperature and then coarsely powder in a dry grinder.

Step 4.

Add peanuts, salt, sugar, ginger, green chilies, coriander leaves and lemon juice, blend the mixture well.

Step 5.

Now take some portion of the mixture in your hands and shape them into flat round vadas. Do this till all the mixture is utilized. keep aside the vadas in a tray.

Step 6.

Heat the oil, deep fry the vadas till golden brown. Serve hot with any accompaniment like Coriander chutney.

Note:

The Saboodana/Sago should be well soaked. Use a strainer or a colander to drain the water. Excess water in saboodana vada mixture will make it difficult to handle the mixture while making vadas . For better taste use roasted ground nuts. For best results Saboodana vada should be fried in a moderately hot oil till light golden on both sides.

Tasty French Toast

French Toast

Preparation time: 15 minutes

Serves: 2

Ingredients:

  • 2 Eggs
  • 4 tbsp milk
  • 1/2 tsp salt or / salt to taste
  • 2 tsp sugar
  • 1 tbsp olive oil/ or any other cooking oil
  • 2 slices bread

Method:

Step 1.

Cut each slice into two triangles. Two slices will yield four triangles, keep aside.

Step 2.

Crack the eggs in a mixing bowl and whisk well. Mix salt and sugar, stir in milk.

Step 3.

Dunk each piece of bread in the egg mixture making sure that bread piece is fully covered.

Step 4.

Heat oil in a non stick pan. Cook the dunked bread piece in the pan on low heat until the underside is light brown (approx. 2-3 minutes).

Step 5.

With a spatula flip the bread piece over and cook again for another 2-3 minutes or until light golden brown.

Step 6.

With the help of the spatula transfer the French toast to a plate. Serve hot with maple syrup, fruit on top, honey or jelly.

Egg Rolls

 

Ingredients:

  • 3 eggs
  • 1 tablespoon milk
  • 1 tablespoon tomatoes, finely chopped
  • 1 tbsp Mushrooms, finely chopped
  • 1 tablespoon onion, finely chopped
  • 1 tablespoon coriander/ Cilantro, finely chopped
  • 1 green chili, finely chopped
  • 1/2 tsp Salt or / Salt to taste
  • 1/4 tsp pepper

Method:

Step 1.

Crack the eggs into a mixing bowl and add in milk and salt. Whisk till well blended.

Step 2.

And add in tomatoes, onion, mushrooms, coriander leaves and pepper and mix it well.

Step 3.

Heat a non stick frying pan, lightly spray with oil or put a tea spoon of cooking oil in the pan. Pour in the pan half of the egg mixture and cook it over low heat until half done.

Step 4.

Roll omelet half way up to the middle, add little oil in the pan, each time you roll up. Add in one fourth egg mixture to the side of unrolled omelet, and cook until half done. Roll again half way up and keep the egg roll to the center of the pan. Pout in the remaining egg mixture and cook until half done, and finally roll fully.

Step 5.

Remove the egg roll to a chopping board. To avoid breaking the egg roll, let it cool a bit before cutting.

Step 6.

Slice the egg roll into two inch pieces and serve.

Note: It’s simple , quick , healthy and easy to make recipe. Everyone can make it ! to make it even more easy to handle, two smaller rolls can be made, instead of one.

Chickpea / Kabuli Chana Sundal

Chickpea/ Kabuli chana/ Garbanzo Beans Sundal-It is known as ‘sundal’ in Tamil and ‘gugari / ghugari’ in Kannada.

Hi friends! Here is one easiest recipes to put together. Channa/Chickpea sundal are made during Navaratri or Ganesha chturthi in South India. It is great as a snack at any other time too.We can always make a variety of sundal for any festival as it is very easy to prepare and an absolutely guilt free snack or breakfast to compensate the extra calories from the fried stuff and sweets made on festivals.

Ingredients:

  • 1 cup Kabuli Channa/ Chickpeas(white chole)
  • 2-3 tbsp grated fresh Coconut
  • 1 tsp chopped Coriander,to garnish
  • juice of 1/2 lemon
  • 1 level teasp /Salt to taste

For seasoning:

  • 1/2 tsp Mustard seeds
  • a sprig of Curry leaves
  • 1 tbsp Oil

Method:

Step 1.

Soak Chana overnight or at least for 8-9 hrs, Add salt and pressure cook ,after the first whistle, reduce the heat and after 20 minutes remove from the stove.

Step 2.

Let the pressure cooker cool, open the Chana should be soft and firm to touch and should not be either hard or mushy.

Step 3.

Drain the chana and keep it aside, you can use this drained water to make healthy soups.

Step 4.

Heat oil in a kadai and crackle mustard seeds , add curry leaves fry for few seconds ,add grated coconut and fry it for a minute.

Step 5.

Add cooked and drained chana and mix well and blend it with seasoning on low flame for two minutes.

Step 6.

Switch off the flame and add lemon juice and mix well. Serve them hot, warm or cold as a snack or with breakfast.

 Note:

  • If using canned chickpeas, drain water and use.
  • I used here dry white chickpeas/Garbanzo beans/Kabuli chana. I soaked and cooked according to instructions given above.

Hi friends! We can always make a variety of sundals for  protein rich breakfast, it is very easy to prepare and an absolutely healthy and delicious snack.

Ingredients:

  • 1/2 cup Kabuli Channa/white channas
  • 1/2 cup Black eyed beans/ Lobiya
  • 2-3 tbsp grated fresh Coconut
  • 1/2 lemon’s juice
  • 1 level teasp /Salt to taste

For seasoning:

  • 1/2 tsp Mustard seeds
  • a sprig of Curry leaves
  • 1 tbsp Oil

Method:

Step 1.

Step 5.

Add cooked and drained chana /Chickpeas, Lobiya/ Black eyed beans mix to the above seasoning. and blend well .

Step 6.

Add lemon juice and mix well. Serve these protein rich Sundals hot, warm or cold as a snack or with breakfast.

Aloo Curry

Aloo tamater 3  Puri

(Aloo sabzi with Puris)

Prep time: 20 minutes

Ingredients:

  • 4 medium size potatoes , boiled, peeled and cut into small cubes
  • 2 medium tomatoes/tamatar
  • 1 tsp cumin seeds/jeera
  • 1/2 tsp red chili powder
  • 1/4 tsp turmeric powder
  • 1/4 tsp asafetida / heeng
  • 1 tbsp ginger, finely chopped
  • 2 cups water
  • 1 tbsp Olive oil
  • 1 tbsp coriander leaves, finely chopped for garnishing

Method:

 Step 1.

 Cook the potatoes in a pressure cooker with two cups of water. The moment pressure is formed, reduce the heat to low flame for 5 minutes, switch off the stove. Cool the cooker to room temperature, open the lid take out the potatoes, peel and cut into small cubes three potatoes. Mash coarsely the fourth potato and Keep aside.

Step 2.

Heat the oil or ghee in a pan add the cumin seeds, when it starts spluttering, add asafetida. Fry for few seconds till asafetida turns light pink.

Step 3.

Add the tomatoes and saute till they become soft and you see the oil leaving the sides.

Step 4.

Add cubed and mashed potatoes, red chili powder, chopped ginger, salt and two cups of water stir. Mashed potato is added to help in thickening the gravy.

Step 5.

Let the curry cook for 7-8 minutes or more on a medium flame, till it thickens slightly.

Step 6.

Garnish with coriander leaves, serve hot, with puris.

Lentil/Dal Appams

Hi friends! In all, five assorted husked dals / lentils are used for making these appams.  On fermenting this batter provides very soft appams. Makes a very nutritious and delicious breakfast or healthy snack.

Ingredients:

  • 1/4 cup Black gram dal husked
  • 1/4 cup Moong dal husked
  • 1/4 cup Bengal gram dal /chanadal
  • 1/4 Toor dal
  • 1/4 cup Masoor dal
  • 1/4 cup Raw rice or rice flour
  • 1 tsp Fenugreek seeds (methi)
  • 2-3 Green chili
  • 4 tbsp curry leaves , finely chopped
  • 1/4 level tsp Asafetida powder
  • 1 tsp level salt / or as per taste salt
  • Olive oil for cooking

Method:

Step 1.

Wash the dals /lentils,raw rice (if rice powder is being used then no soaking of raw rice required) very well and soak in water together overnight.

Step 2.

Grind soaked dals / lentils and rice, fenugreek seeds and finely chopped curry leaves, green chilies in a grinder, adding water slowly (use a minimum quantity ), to a thick consistency batter.  Transfer the batter to a mixing bowl, add salt mix well. Keep it for fermenting for 2-3 hours.

Step 3.

Take a table spoon of oil in a pan , heat the oil add asafetida wait for a few seconds for it to turn pink, switch of the stove. Add this tempering to the batter. Mix rice flour (if no previously soaked raw rice added), and salt in the dal batter, and mix well. Keep it aside for few minutes.

Step 4.

Place an appam skillet applying  or spraying oil to all the moulds of the skillet.  When heated, fill in all the moulds of the skillet one by one and cover the skillet with a lid.

Step 5.

After few minutes check if appams are cooked by inserting in a knife in the appams, if it comes out clean, appams are ready on one side. Flip each appam to cook till golden on the reverse side, spraying or adding a drop of oil to each mold.

Step 6.

Serve hot with coconut chutney.

Hi friends!All varieties of dals/ lentils can be added to make Breakfast / Snacks nutritious.  Almost all the dals / lentils can be used to prepare a variety of appams.  On fermenting this dough delicious appams can be prepared.  Coconut chutney is a good accompaniment to this wonderful preparation.

Serves :4-6

 Ingredients:

  • 1/2 cup Moong dal (husked)
  • 1/4 cup Rice flour or raw rice 2 table spoons soaked
  • 1/4 level tsp Asafetida powder
  • 2-3 Green chilies
  • 8 to 10 Curry leaves, finely choped
  • 1tsp Ginger, finely grated
  • 1 tsp level salt / or Salt as per taste
  • 1/4 tsp Baking soda
  • Olive oil for lining the appam skillet before Cooking

Method:

Step 1.

Wash the two dals /lentils,raw rice (if rice powder is being used then no soaking of raw rice required) very well and soak in water together for overnight.

Step 2.

Grind soaked dals / lentils and rice, fenugreek seeds and finely chopped curry leaves, green chilies in a grinder, adding water slowly (so a minimum quantity is used), to a thick consistency batter.  Transfer the batter to a mixing bowl, add salt mix well. Keep it for fermenting for 2-3 hours.

Step 3.

Take a table spoon of oil in a pan , heat the oil add asafetida wait for a few seconds for it to turn pink, switch of the stove. Add this tempering to the batter. Mix rice flour (if no previously soaked raw rice added), salt, and baking soda in the dal batter, and mix well.Keep it aside for few minutes.

Step 4.

Place an appam skillet applying  or spraying oil to all the molds of the skillet.  When heated, fill in all the moulds of the skillet one by one and cover the skillet with a lid.

Step 5.                                         

After few minutes check if appams are cooked by inserting in a knife in the appams, if it comes out clean, appams are ready on one side. Flip each appam to cook on the reverse side, spraying or adding a drop of oil to each mould.

Step 6.

When cooked both sides to a light golden colour, remove from the skillet and serve hot with coconut chutney.

What Are Oats and Oatmeal?

Hi friends! Oats Tikki or oats cutlet is easy and healthy snack made with oats, potato, mixed vegetables and spices.

 

Ingredients:

  • 3 medium size Boiled and mashed potatoes
  • 1 cup White oats ( I used quaker’s)
  • 2 tbsp Olive oil
  • 1/2 cup Green peas
  • 1/2 cup French beans finely chopped
  • 1/2 cup Broccoli cut in to small florets
  • 8 Almonds finely cut
  • 1/4 tsp Red chili powder
  • 2 tbsp Fresh coriander leaves, finely chopped
  • 1 level tsp Salt/ or to taste
  • 1/2 cup Semolina

Method:

Step 1.

Take the mixed vegetables in a pressure cooker add 1/4 cup water and 1/4 tsp salt. Place the cooker on the high flame, as soon as pressure is formed, switch off the stove. Cool the cooker, open and take out the vegetables, keep aside.

Step 2.

Boil and mash potatoes, mix in steam cooked vegetables. Add white oats, salt, chili powder, chopped coriander. Mix the ingredients well.

Step 3.

Shape into medium size cutlets . Roll the cutlets in semolina . Cook both sides adding cooking oil slowly on slow fire till golden brown (preferably nonstick tava/ plate/ pan) .

Serve hot with coriander chutney.

Bhatura

Bhatura is a variety of Indian bread , popular all over India. This fried bread has a delicious combination with flavored chickpea / chole curry . This recipe has no yeast in its making, instead yogurt and baking powder is used. Serve bhatura with Chole, Bundi Raita which is lightly sprinkled with spices. Chole Bhature is an Indian breakfast dish.

Prep time: 20 minutes

Cook time: 20 minutes

Yield: 10

Ingredients

  • 3 cups Maida / all purpose flour
  • 2 cups Semolina / Sooji
  • 1 cups Curd/yogurt
  • 1 tsp Salt
  • 2 tsp Sugar
  • 1 tsp Baking powder
  • 2 tbsp of Oil for dough making
  • 1 tbsp Oil for coating kneaded dough
  • Water to knead the dough
  • Oil – for deep frying

Method

Step 1.

In a mixing bowl with a sieve, sift the all purpose flour, baking powder.Dissolve salt and sugar in yogurt. To the sifted flour add  semolina and two tablespoons of oil and mix well.

Step 2.

Dissolve salt and sugar in yogurt.Add this  yogurt to the flour. Knead the flour into a soft yet firm dough by gradually adding water to it.

Step 3.

Cover the dough with a wet cloth and keep for an hour.

Step 4.

Make lemon sized 10 small balls from the dough. Grease your palms with a little oil and press each ball flat. Cover and keep to ferment for 15 minutes.

Step 5.

Roll each ball into thick flat round shape (about 5″ to 6″ diameter). It should not be too thick or too thin. Heat oil in a kadai/wok and slide the batura into the hot oil slowly.

Step 6.

Deep fry the bhaturas on medium heat. Using the back of the frying spoon, press in the center of the bhatura and along the edges gently, it will puff up nicely. Flip over and fry the other side till light golden brown.

Step 7.

Drain on absorbent paper kitchen towel. Serve hot with chole/ white Chick peas curry.

 Note:

The oil should be moderately hot before frying the bhatura.

  • 1 tsp Green cardamom powder

Method:

Step 1.

Take curd / yogurt and sugar in a big mixing bowl, whisk curd gently to get a smooth texture of the curd.

Step 2.

Peel Mangoes, cut into small cubes and fold into the whisked curd. Add almonds, cardamom powder.

Step 3.

Serve chill.

 Mooli / Radish stuffed Parathas

Hi friends! For stuffed paranthas/Indian flat bread, the flour used is finely ground wholemeal flour/atta and the bread/parantha is shallow fried. Perhaps the most common stuffing for parathas is mashed, spiced potatoes /aloo ka parantha, vegetables, followed perhaps by dals /lentils.

Preparation Time : 15-20 minutes

Cooking time : 10-15 minutes

Cuisine : North Indian / Punjabi

Servings : 4

Ingredients :

  • 2 medium size White radish/ Mooli
  • 2 cups whole wheat flour (atta)
  • 2 tbsp finely chopped fresh coriander leaves
  • 2 Green chilli (finely chopped)
  • 1/2 tsp ajwain / carrom seeds
  • 1 tsp roasted and powdered geera seeds / cumin seed
  • 1/4 tsp Red chilli powder
  • 1 tsp salt / or Salt to taste
  • 2-3 tbsps pure ghee / olive oil for shallow frying

Method :

Step 1

Take two cups whole wheat flour in a bowl, mix water , little at a time. Add enough water to make a firm dough ,not too soft not too hard. Keep aside, covered for fifteen to twenty minutes.

Step 2

Wash, peel and grate the Radish in a bowl. Take a muslin cloth, put the grated radish on it and tightly twist the cloth to squeeze out all the juice. Keep the dry radish gratings in a mixing bowl.

Step 3

Add the grated radish, finely chopped coriander leaves , carom seeds, green chilies, cumin powder, red chili powder and salt . Mix all the ingredients well.

Step 4

Divide dough in medium-sized balls, roll out each ball into a medium thick chapatti using dry flour for dusting.

Step 5.

Put  two tablespoons of the radish mixture in the middle of the rolled chapatti and close from all sides. press on your palm.

Step 6.

Sprinkle a little flour on top, and roll the stuffed dough gently, taking care not to break it. Heat a tawa /Griddle and cook the parathas.

Step 7.

Shallow fry both sides to golden brown , using a little ghee. Serve hot with a blob of butter. A bowl of curd / yogurt and fresh coriander chutney/ chili pickle is a good accompaniment.

Quinoa with Vegetables

Ingredients:

  • 1 cup Quinoa
  • 2  cups water
  • 3 medium size onions finely chopped
  • 1/2 cup French beans finely chopped
  • 1/2 cup Broccoli florets cut into small pieces
  • 1/2 cup green peas shelled
  • 1/2 cup carrots finely cubed
  • 1/2 cup green bell pepper/ capsicum, finely chopped
  • 4 cloves of garlic finely chopped
  • 1 tbsp dried watermelon seed kernels
  • 1 level tsp salt / or salt to taste
  • 1/2 cup Almonds, sliced
  • 1 tbsp lemon juice
  • 3 tbsp Olive oil

Method:

Step 1.

Take a sauce pan put Quinoa in it, add water, on high flame bring it to boil, reduce the heat to low flame until water is absorbed and quinoa looks a bit like sprouts. Keep aside.

Step 2.

Take all the chopped vegetables but for capsicum, in the pressure cooker, add 1/4 cup water and 1/2 tsp of salt in   the cooker. (After One whistle switch off the heat). Cool it, and keep the steamed vegetables aside.

Step 3.

Take a kadahi / wok, heat olive oil in it, add onions and sauté onions till light golden. Add chopped green bell pepper/ Capsicum, sliced almonds,watermelon seed kernels, fry for few more minutes.

Step 4.

To the fried onions, green bell pepper/ capsicum, add all the steamed vegetables, sauté for few minutes.

Step 5.

Add ,cooked Quinoa, salt to the sautéed vegetables , add juice of lemon, mix well.

Step 6.

Serve  hot  for a delicious and very healthy breakfast !

 

 

 

Black-eyed beans salad

 

Black-eyed beans/ Lobiya  salad is colorful and delicious salad, with freshly prepared dressing for a tangy flavor. This is a protein rich easy to make salad.

Serves: 6

Ingredients:

  • 1 cup black-eyed beans/ lobhia
  • 1 medium size boiled potato, peeled and cut into very small cubes
  • 1 green pepper / Simla mirch finely cut
  • 100 gms Paneer / Cottage cheese
  • 2 medium size tomatoes seeded and finely chopped , Slice the tomato vertically (from stem top to bottom) into four quarters. Use a sharp knife to carefully slice the seeds away from the tomato flesh. Discard the seeds.
  • 1 cucumber cut finely
  • 1 level tsp salt
  • 1 tbsp finely cut fresh mint leaves
  • 1 tbsp oil

for Salad Dressing:

  • 2 tbsp Virgin olive oil
  • 1 1/2 tbsp lemon juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp cumin seed, roasted and powdered

Method:

Step 1.

Wash and soak the black-eyed beans/ lobiya over night.

Step 2.

Pressure cook the black-eyed beans/ lobiya with salt and water on full flame, as the pressure forms, reduce to low flame for twenty minutes. Switch off the stove, let it cool naturally. In a strainer, strain the lobiya and keep aside in a mixing bowl.

Step 3.

Take a kadhai / wok heat the oil on medium flame. Add boiled black-eyed beans, Paneer/ Cottage cheese and potatoes. Stir-fry for few minutes. Switch off the stove, cool the mixture to room temperature.

Step 4.

Add to fried black-eyed beans, paneer and potatoes, cut tomatoes , cucumber and green pepper, mix well.

Step 5.

Mix all the salad dressing ingredients together. Add the salad dressing to the salad and mix well.

Step 6.

Garnish with the finely cut fresh coriander/ dhaniya leaves, Serve with main course.

Hi friends! Vegetable upma is an easy to prepare, tasty  healthy delicacy.

Serves: 6-8
Cooking time (approx.):
15-20 minutes

Ingredients:

  • 1 cup semolina (or cream of wheat)
  • 2 medium size onions finely chopped
  • 1/2 cup French beans finely chopped
  • 1/2 cup Broccoli florets cut into small pieces
  • 1/2 cup green peas shelled
  • 1/2 cup carrots finely cubed
  • 1 ” piece ginger grated
  • 1 sprig curry leaves
  • 1 tsp mustard seeds
  • 3  cups water
  • 2/3 level tsp salt or salt to taste
  • 8 cashew nuts broken into small pieces
  • 2 tbsp roasted chana dal
  • 4 tbsp Olive oil

Method:

Step 1.

In a kadahi/wok, dry roast semolina, stirring continuously (to a slight or no color change), on medium flame. Keep aside.

Step 2.

In a pressure cooker, add all the chopped vegetables, 1/4 cup water and 1/4 tsp of salt. On high flame when the pressure is formed switch off the stove. Let the cooker cool open the lid and take out the steamed vegetables and keep them  aside.

Step 3.

Heat the remaining oil in the kadhai/wok. Toss in the mustard seeds, wait for them to splutter and then add the curry leaves, red chillies, onions, cashew nuts, roasted chana dal and ginger. Stir-fry on medium heat till the onions are transparent or golden and soft.

Step 4.

Add water and salt to the seasoning. Bring the water to boil.

Step 5.

Slowly add the roasted semolina/suji/rawa to the boiling water and stir continuously. Mix in the steamed vegetables.

Step 6.

Cook on low heat stirring continuously for about four-five minutes, till the mixture is set and solidifying. Serve hot with coriander or coconut chutney.

Vermicelli/Seviyan with Vegetables

Hi friends! Make Seviyan / Vermicelli more healthy and delicious with mixed vegetables following this easy recipe.

Prep time: under 10 minutes
Cook time: under 20 minutes
Serves: 6-8

Ingredients:

  • 500 ml Water – for boiling Vermicelli
  • Bambino Vermicelli – 200 grams pkt
  • 1/2 cup beaten curd
  • 1/4 cup finally chopped French beans
  • 1/4 cup broccoli cut in to small florets
  • 1/4 cup frozen Peas
  • 1/4 cup finely cut carrots
  • 2 table sp Olive Oil

For the seasoning:

  • Mustard -1 tsp
  • 1 small sprig of Curry leaves
  • 2 tsp pre roasted Bengal gram dal

Method:

Step1.

Boil the water in a deep pan, put vermicelli in the boiling water.Let it boil for one minute only. Strain the vermicelli and leave in the strainer and keep aside.

Step 2.

Take all the chopped vegetables in the pressure cooker, add 1/4 cup water and a pinch of salt in the cooker. (After One whistle switch off the heat). Cool it, and keep the steamed vegetables aside.

Step 3.

Heat oil in a pan, add mustard seeds, when mustard seeds start spluttering, add curry leaves, fry the curry leaves for a few second, add roasted Bengal gram dal. Fry for few minutes more, switch off the heat.

Step 4.

In the above seasoning add boiled vermicelli and steamed vegetables, salt , whisked curd, mix well.

Serve hot with fresh coriander chutney or pickle of your choice.

Hi friends! A light , delicious and healthy breakfast or snack time recipe, for everyone.

Ingredients:

For the cheela/ pan cake batter:

  • 1 cup Gram flour (besan)
  • 1/2 tsp salt
  • 1/2 tsp Ajwain (Carom seeds)
  • 1/4 tsp Soda bicarbonate
  • 1/4   tsp Coriander powder
  • 1/4 tsp red chili powder
  • 1 tbsp olive oil

For the Cheela/ pan cake Filling:   

  • 200 gms Paneer (cottage cheese),grated
  • 1 medium Onion , finely chopped
  • 1/2 tsp jeera (cumin seed)
  • 1/2 tsp Salt /or to taste
  • 1/4 tsp black pepper powder
  • 1/2 cup Fresh coriander leaves, finely chopped
  • 2 tablespoon Olive oil

Method :

 For the batter:  

Step 1.

In a bowl mix together gram flour, soda bicarbonate, salt, carom seeds, coriander powder , red chili powder and gradually add sufficient water to make a thick batter of pouring consistency.

Step 2.

Whisk well to make the batter light and smooth, add olive oil to the batter and mix well. Keep aside.

For the filling:

Step 1.

Heat one tablespoon olive oil in a kadai (wok or pan) and sauté onions till light golden.

Step 2.

Add grated cottage cheese, salt and black pepper powder, finely chopped fresh coriander leaves, mix well and fry for 3-4 minutes more. Keep aside.

For the Cheelas / pancakes:

Step 1.

Heat a non stick pan, prove the pan with olive oil ( pore a few drops of olive oil in the pan and spread in the pan), take a small ladle full of batter and spread it evenly and thinly in a circular motion using the back of the ladle.

Step 2.

Cook the cheela on both sides on a moderate heat, using a little more olive oil, till golden brown.

Step 3.

Place a portion of the stuffing on the inner side of the cooked cheela, fold the other side over it and serve hot with fresh coriander chutney.

Ingredients:

  • 2 cup Avial/Poha
  • 2 medium size onions finely chopped
  • 2 medium size potatoes, peeled and cut in to small cubes
  • 6 pcs (soaked and Peeled) Almonds – (Sliced)
  • 1/4 cup Peeled Peanuts
  • 1tbsp Pumpkin seeds
  • 6-8Curry leaves
  • 2 tbsp finely chopped coriander leaves
  • 1/4 tsp Turmeric
  • 1/4 tsp powder Fennel seeds
  • 1/4 tsp Mustard seeds
  • a pinch Asafetida
  • 2 tbsp olive oil
  • Mixed vegetables- cooked in pressure cooker with 1/4 tsp salt. (The moment pressure is formed, switch off the heat)
  • 1/2 cup French beans finely cut
  • 1/2 cup broccoli cut into small florets,
  • 1/2 cup shelled peas,
  • 1/2 cup carrots cut in to tiny cubes
  • 1/2 tsp salt/ or salt to taste
  • 1 tsp sugar
  • 1 lemon’s juice

Method:

Step 1.

Heat oil in a kdhai / wok and add mustard seeds, when they start crackling , add asafetida, curry leaves and sauté for few more seconds.

Step 2.

Then add turmeric powder and chopped onions, saute the onions till light golden in colour. Add cubed potatoes. Cover and cook on low heat till potatoes are tender.

Step 3.

While onion potato mix is getting cooked, rinse Avial /poha thoroughly with water in a strainer, drain the water and keep it aside in the strainer only.

Step 4.

Add steamed mixed vegetables, seeds and dry fruits to the cooked onion potato mix and sauté on medium flame for couple of minutes more. (without burning them)

Step 5.

Add the poha, salt, sugar to the cooked, mixed vegetables and dry fruit and mix it well. Reduce the flame to low and sauté for a minute.

Step 6.

Switch off the heat, healthy veggie , Poha is ready and garnish it with chopped, onions coriander leaves.Enjoy it as a morning breakfast or an evening snack with fresh coriander chutney .

Hi friends!Rava Kesari” is a popular sweet in the south Indian states especially Tamil Nadu and Karnataka. It is easy to prepare and the ingredients are easily available. Rava kesari is made with semolina, it’s North Indian counterpart is sooji ka halwa.

Preparation Time : 5 minutes

Cuisine: South Indian

Cooking Time : 20 minutes.

Serves : 4

Ingredients:

  • 1 cup fine rava/sooji/semolina
  • 3/4th cup sugar
  • 2 cup milk + 1 cup water
  • 6-8 green cardamom, powdered
  • 8 cashew nuts
  • 8-10 raisins
  • 3 pinches of saffron strands, powdered lightly
  •  4-6 tbsp pure ghee  for frying

Method:

Step 1.

Heat one tbsp ghee in a frying pan/ kadai/ wok and fry lightly cashew, Kishmish, cinnamon, cardamom and keep aside. In a mortar-pestle crush the cardamom seeds to a fine powder and keep aside.

Step 2.

In a deep pan heat water-milk mixture, bring it to boil add saffron, mix. Switch off the stove. Keep aside

Step 3.

In a frying pan/ kadai/ wok take four tbsp ghee, on medium flame add suji/ rava/semolina and fry till the lovely aroma of fried rava comes . Reduce the heat to low flame.

Step 4.

Slowly add the boiled milk -water mix to the fried suji/ rava/semolina, stirring continuously. Add dry fruit mix, alongside, add sugar, cardamom powder to it, stir well till it thickens and sets.The suji/ rava/semolina will absorb the water and the mixture will start thickening.

Step 5.

Keep adding a few teaspoons of ghee in the suji/ rava/semolina mix and keep on stirring till the whole mixture starts thickening and starts to leave the sides of the kadai or pan. Switch off the heat.

Step 6.

Serve Rava kesari hot .

NOTE:

*Take all the ingredients in the above mentioned quantity only.

*Do not refrigerate the rava kesari while it is hot, allow it to cool down to room temperature.

*While adding ghee, keep on stirring well otherwise rava kesari prepared will not be uniformly solid.

* You can add sugar equal to the amount of rava for more sweet or 3/4 cup or half of the sugar if less sweet rava kesri is required.

*Adding more or less ghee is individual choice, at the same time don’t forget to roast Rava using ghee.

Parathas are one of the most popular unleavened flatbread in the India part of the Indian Subcontinent and they are made by baking whole wheat dough on a tava, and finishing off with shallow frying, Parathas are thicker and more substantial than chapatis/rotis .

Hi friends!Here is the recipe of Parathas, whole wheat flour soft dough stuffed with a spicy mixture of boiled and mashed potatoes which is rolled out and cooked on a hot Tawa/griddle with butter or ghee. These are absolutely irresistible!!!

Preparation Time : 15-20 minutes

Cooking time : 10-15 minutes

Ingredients :

  • 6-7 Potatoes medium (pressure cooked for 5-6 minutes)
  • 2 cups whole wheat flour (atta)
  • 2 tbsp finely chopped fresh coriander leaves
  • 2 Green chilli (finely chopped)
  • 1″piece Ginger (finely grated)
  • 1 tsp roasted and powdered jeera / cumin seeds
  • 1 onion medium size (finely chopped)
  • 1 tsp dry mango powder (amchoor)
  • 1/4 tsp Red chilli powder
  • 1 tsp salt / or Salt to taste
  • 2-3 tbsps pure ghee / olive oil for shallow frying

Method :

Step 1.

Take atta (whole wheat flour) in a bowl and mix in water, little at a time. Add enough water to make a firm dough (not too soft not too hard). Keep aside, covered for fifteen to twenty minutes.

Step 2.

Peel and mash potatoes. Add finely chopped onions, coriander leaves, ginger, green chillies, cumin powder, mango powder, red chili powder and salt. Mix the ingredients well.

Step 3.

Divide the dough into medium-sized balls. Roll out each ball into a medium thick chapatti using dry flour for dusting.

Step 4.

Put two tablespoons of the potato mixture in the middle of the rolled chapatti and close from all sides. Press on your palm.

Step 5.

Sprinkle a little flour on top and roll the stuffed dough gently, taking care not to break it. Heat a tawa (griddle) and cook the paratha.

Step 6

Shallow fry both sides to golden brown, using a little ghee. Serve hot with a blob of butter. A bowl of curd/yogurt and fresh coriander chutney is a deliciously good accompaniment!

Method :

Step 1

Step 5

Sprinkle a little flour on top, and roll the stuffed dough gently, taking care not to break it. Heat a tawa /griddle/ non-stick tawa, place the rolled paratha on the heated tawa.

Step 6

Shallow fry both sides on medium heat with little pure ghee/olive oil till both sides are evenly cooked and golden. Serve hot with a blob of butter.

Ingredients:

  • 3 Potatoes medium (pressure cooked for3-4 minutes)

Method:

Step 1.

Wash and evenly mash the potatoes . Finely chop methi leaves. Keep aside.

Step 2.

Mix mashed potatoes, finely chopped methi leaves, green chilies, ajwain, chili powder and salt combine all the ingredients in a deep bowl, add atta / whole wheat flour and knead into a semi-soft dough using enough water (little at a time).

Step 3.

Divide the dough into 6 equal portions. Roll each portion into a 3″diameter circle, dusting it with a little wheat flour for rolling, brush with melted ghee/ oil, fold into half to form a semi- circle. Brush the semi-circle with melted ghee and fold both ends again to form a square. Roll out into 5″ square paratha using a little wheat flour for rolling.

Step 4

Heat a non-stick tawa (griddle) and Shallow fry both sides each paratha, using a little ghee/ oil, till golden brown spots appear on both the sides. Repeat steps 3 to 4 to make 5 more parathas.

 Step 5.

Serve hot with a blob of butter. A bowl of curd / yogurt and chili pickle is good accompaniment.

  • 1 tbsp Cumin powder  (Cumin roasted and powdered)
  • 1 tsp Red chilli powder
  • 1 level tsp Salt  or / to taste
  • 1 tsp Garam masala powder
  • 1 tbsp Tamarind pulp or/ Dry mango/ or amchur powder 1 tablespoon / or seeded tamarind small marble size soaked and pulp taken out
  • 1 green chili ,slit 1 (optional)
  • 2 inch Ginger piece,cut into thin strips or grated

Method:

Step 1.

Wash chanas well  and Soak for at least seven-eight  hours  in  500 ml of water . Retaining the same water,add salt to the chana and cook in a pressure cooker till done ( 20-25 minutes after the pressure is formed in the pressure cooker).

Step 2.

Put the quartered onions in the pressure cooker add 1/4 cup of water. Pressure cook till the pressure is formed, switch off the heat. Cool and grind into a paste.

Step 3.

Heat the oil in a deep pan, put ajwain, when it splutters, add onion paste . Sauté for 3-4 minutes and add coriander powder, cumin powder and red chilli powder,tamarind paste (or dry mango powder) Sauté again. Add boiled chanas, cook on low flame for 10-15 minutes .

Step 4.

Add garam masala powder, mix well, cook for few minutes more.

Step 5.

Garnish with coriander leaves, green chillies, tomato slices , fried potato pieces and finely cut ginger strips and serve hot with puri, bhatures etc.

Note: Bundi raita compliments chole.
